After more than a decade of daily use, this santoku, a versatile, all-purpose kitchen knife is still the knife I reach for most in my kitchen.
Japanese blades are known for their sharpness, but traditional knives often require high maintenance. I once owned a more traditional Japanese knife and loved the cutting experience, but found it rusted quickly in everyday use. This knife keeps that precision while being far more forgiving — it doesn’t rust as easily and is much easier to maintain for daily cooking.
Paired with a Western-style handle that sits naturally in the hand, the balance makes it comfortable to use day after day, without feeling precious or demanding. It’s a tool that fits naturally into everyday cooking, and one I’ve come to rely on over the years.
Nagomi knife series are produced by Mitsuboshi Cutlery, a Japanese knife-making brand with over 140 years of history. Each knife is handmade by a craftsman in Japan.

Hand wash only. Please do not use a dishwasher.

Clean after use and dry thoroughly to keep the blade in good condition.

Avoid open flames, microwaves, or ovens.

Before first use, wash gently with dish soap and rinse well.

When the blade feels less sharp, it can be refreshed using newspaper (instructions included).
